Wondering what this project is all about? Check out my first post for Day 1 to get the back story.
Morning Routine.

tea, and turnips
Dinner roast goat shank with local potatoes, onion,

Teff Pudding for dessert (recipe below)
Teff Pudding (2-3 people)
I originally saw this recipe years ago on the back of a Bob's Red Mill Teff Grain.

2 cups water
1/2 cup Teff grain
3 tablespoons cocoa powder
2 tablespoons maple syrup, honey, or agave
2 teaspoons vanilla extract
pinch of salt

Boil water and teff grain, cover and simmer for 15-20 minutes or until the water is absorbed.

In a blender or food processor, blend all ingredients until smooth and light.

Pour in individual serving bowls. Serve warm or chilled.
